Elizabeth `Betty / Rosie` Rose Koffski, Age:66

Elizabeth "Betty" Rose Koffski, (nee Malloy), age 66, passed away on august 8, 2023 at her home in Chicago after a 7 year battle with frontal temporal dementia.
Growing up in the Humboldt Park neighborhood of Chicago, she was the only girl of the late George and Eleanor Malloy's five children.  She is preceded in death by her parents and her brother, Christopher (Juanita) and Dennis, and survived by her brothers, Timothy (Mary) and Keith, and many nieces and nephews.
Betty met the love of her life, Richard Koffski (retired CFD), growing up in the same neighborhood.  They married in 1975, and had two children, Amanda and Michael (Meghan).  She became the grandmother of her three beloved grandchildren, Jacob, Reese, and Ryan.
Betty was very involved in St. William parish as her kids grew up, volunteering her time and efforts in various aspects of the school and community, working on many committees, boards, fundraisers and events.
Betty found her niche career-wise in medicine, working in ophthalmology and primary care, culminating as a practice administrator in both areas.  She was smart, business savvy, and a tough but fair boss, she helped build several successful medical practices in the area.
She and Richard loved to be able to travel together, from their Mediterranean cruise, to their frequent trips to Arizona for their time share.  She also snuck in a few girls' beach trips too!  That lady LOVED the sun!  Summers you would find her by her pool relaxing, or playing with the grandkids, and vacations often involved beach or pool time!  And maybe some margaritas on the deck in the evening!
And boy, could that lady shop!  Whether it was out hunting for the perfect outfit with her partner in crime, Terry, or finding ways to spoil the grandkids, she could always find just the right thing.
She also loved her beauty routines, manicures, pedicures, and facials, ther was nothing like a trip to the salon or spa!  Every time she had a hair appointment, who knew what color she would come home with each time!
Betty was the rock of the family, they all sought her out for help and advice with anything and everything, and so did her friends.  There was nothing she wouldn't do for a loved one, and everyone knew it.  She was always there with a helping hand, a hug, a listening ear, sage advice, or even the dreaded reality check.
She was sassy and funny, an attitude to match, but it was all part of her charm.  she was a tough chick with a heart of gold, and anyone who met her lovved and respected her for all of it.  She always fought for doint the right thing, and doing the best she could for everyone around her, a true mother hen, whether it be woth her family, her employees, or her friends.
If you knew Betty, count yourself lucky.  If you didn't, you missed out, but ask her loved ones to tell you a few stories over a cup of coffee.
Visitation will be held on Sunday August 13th from 3:00 to 8:00 pm at Olson Burke Sullivan Funeral and Cremation Center.
Prayers will be said at 9:00 am at the Funeral home Monday August 14th and processing St. Elizabeth of The Trinity Catholic Church for Mass at 10 :00 am.
